This Is How Caviar Is Harvested

If you’re a rich bitch, you have to consume rich bitch food. It’s just a rule; make enough money, and soon, your meals must (by law) be covered in gold leaf or other unnecessarily culinary accouterments.
One of the most popular elements of bougie cuisine is caviar. While there’s cheap caviar out there, the best of the best can go for hundreds of thousands of dollars.
In order to harvest it, one of two things can be done. First, you can remove the eggs from the fish while keeping it alive (the “no kill” method). This has upsides (keeping the fish alive) and downsides (very difficult and doesn’t produce as many eggs). That’s why most producers go for option two: just killing the thing and harvesting its roe.
